If you're a pumpkin lover, there's almost no dessert that can't be improved with a little pumpkin and some spice! These Peanut Butter Pumpkin Cookies are no exception - and they also happen to be super easy to whip up.
1 cup Yumbutter Peanut Butter
1 cup pumpkin puree
3/4 cup softened or melted butter
1/2 cup white sugar
3/4 cup brown sugar
3 tsp pumpkin spice
3 cups whole wheat flour
2 tsp of baking soda
Pinch of salt
In a bowl combine Yumbutter Peanut Butter, pumpkin puree, softened or melted butter, white sugar, brown sugar, and pumpkin spice. Combine until mixture is smooth.
Add whole wheat flour, baking soda and salt. Form batter in golf ball sized balls and, using a fork, make a crisscross pattern in the top of each dough ball to flatten cookies. Bake at 350 degrees for 10 minutes.
