Vegan & Paleo Carrot Cake Whoopie Pies

Imagine the perfect ratio of sweet and tangy cream cheese frosting sandwiched between two tender, cake-like cookies. Now imagine they're also vegan and paleo - and you've got these delicious Carrot Cake Whoopie Pies!

Ingredients

for -6+ servings:

Cookies

 

  • 1/4 cup of coconut oil
  • 1/4 cup of Yumbutter Almond Butter or nut butter flavor of choice
  • 3 tbsp of maple syrup
  • 3 tbsp of coconut sugar
  • 1/2 tbsp of vanilla
  • 1 whole of flax egg
  • 1 1/8 cups of almond flour
  • 1/4 cup of tapioca flour
  • 1/2 tsp of baking soda
  • 1/4 tsp of sea salt
  • 1/2 tsp of ginger
  • 1/4 tsp of nutmeg
  • 2 tsp of cinnamon
  • 1/3 cup of finely shredded carrots
  •  

    Cream Cheese Filling

  • 1/2 cup of vegan cream cheese
  • 2 tbsp of maple syrup
  • 1/4 tsp of cinnamon
  • 1/4 tsp of vanilla
  • 2 tbsp of Yumbutter Almond Butter or Yumbutter flavor of choice

    Directions

    Make flax egg and set aside to thicken. Combine it with all the other wet cookie ingredients until smooth.

    Add in the dry cookie ingredients. Fold in carrots.

    Drop by spoonfuls onto a lined cookie sheet. Bake at 350 for `12 minutes. Let cool.

    Combine filling ingredients and divide mixture amongst half the cookies and press other halves on top. Enjoy!
