Get your peanut butter and chocolate fix AND a high-protein snack with these homemade high protein peanut butter cups! Just a few ingredients and you can enjoy all of the delicious sweet 'n' salty flavor without all the hydrogenated oils and corn syrup.
for -12+ servings:
1/2 cup of Yumbutter flavor of your choice (Peanut, Almond, or even Cashew would be great!)
2 tbsp of MCT oil or Coconut Oil
16 oz of dark chocolate chips
1 scoop of unflavored or vanilla whey protein powder of choice
1 tbsp of sea salt
In a double boiler, add MCT or coconut oil and dark chocolate chips. Heat and stir until melted.
Grease a 12 count cupcake tin and fill molds with a little less than half way with melted chocolate. Freeze for 8 minutes.
Mix nut butter and whey protein powder in a bowl. Remove filled cupcake tin from freezer. Add 1/2 tsp of the nut butter and protein powder mixture to the center of each mold. Top each with remaining chocolate. Sprinkle with sea salt.
Freeze for two hours and enjoy!
