Peppermint Peanut Butter Cake Balls

Move over pumpkin spice...it's peppermint season! Kid-friendly, easy-to-find ingredients, and oh so yummy, these Peppermint Peanut Butter Cake Balls are proof you can have your cake and eat it bite-size too. 

Ingredients:

  • 1 box of your favorite vanilla cake mix (or you can make it from scratch)
  • ¼ cup Yumbutter creamy peanut butter
  • ¼ cup buttercream frosting
  • 2 cups white chocolate
  • 1 tbsp coconut oil
  • 5-6 candy canes

Directions:

Bake cake according to box ingredients. If the recipe calls for vegetable oil, you can substitute unsweetened applesauce as a healthier option. Let the cake cool completely. Transfer cake from baking pan to a large bowl.

Use your hands to break up the cake into crumbs. This part would be fun for kids!

Add buttercream and peanut butter to the bowl. Mix with your hands.

Roll about a tablespoon of the mixture into a ball. Set onto a baking sheet. Repeat until you’ve used up all the cake. Put the baking sheet into the refrigerator for an hour.

Melt your white chocolate chips with the coconut oil in the microwave for 2-3 minutes, stirring every 30 seconds. Place candy canes in a ziplock bag, seal shut, and break into small pieces using a meat tenderizer (or any hard object you can safely use).

Take cake balls out of the fridge and roll each one in the chocolate using two forks (or if you have popsicle sticks you can just place one in each ball and dip). Sprinkle with peppermint pieces and place back into the fridge for 30 minutes. Enjoy!
