There are two kinds of people in the world: those who actually eat the bananas they buy, and those who totally forget about them until they're suddenly more brown than yellow. If you're in the latter group, have no fear! This recipe is the perfect way to turn lemons into lemonade - er, bananas into a deliciously simple snack!
1/2 package of banana bread mix of choice
2 ripe bananas
1 tbsp oat or nut milk of choice
2 tbsp Yumbutter Peanut Butter
1/2 cup frozen butternut squash
1 tsp cinnamon
Crushed walnuts and chocolate chips for topping
Preheat oven to 350 degrees. Prepare muffin pan with paper liners and grease with coconut oil.
Add all ingredients besides walnuts and chocolate chips to a food processor and blend until thoroughly combined. Pour batter into prepared liners.
Bake for 10 minutes, then add toppings and bake another 5-6 minutes. Let cool and enjoy!
