It's beginning to look a lot like gingerbread season! These gingerbread cookies are gluten-free, vegan, and oil free—making them the perfect sweet treat to keep on hand for cocoa dunking and Christmas movie marathons.

Preheat oven to 325F.
Whisk together molasses, almond butter, and vanilla in a large bowl.
Sift in flour, baking powder and gingerbread spice and use a spatula to mix. Mix until a dough forms. It should be moist, not too sticky, and easily rollable.
Roll out between 2 sheets of parchment paper until dough is 1/4 inch thick. Use cookie cutter to create shapes and place each cookie on a greased baking sheet.
Bake for 8-10 minutes. Let cool completely before transferring frosting to a ziplock bag, cutting the corner, and piping on the designs. Decorate as you please and enjoy!
