Open up your mental cookbook to the section "Weird But Good" and this will be the first entry. It's sweet, it's savory, it's melty, and it combines all your favorite things about PB&J and Grilled Cheese into one sandwich that will take your taste buds on a wild ride straight to flavortown.
Two slices raisin bread (or bread of choice)
1-2 tbsp Yumbutter Superfood Cashew Butter
2 tbsp raspberry chia seed jam (or jam of choice)
1/4 cup gouda cheese or sharp white cheddar
1 slice uncured turkey bacon, cooked
1-2 tbsp ghee or butter for making the grilled cheese
Layer all ingredients between the two slices of bread. Spread a thin layer or ghee or butter on the outside of the bread to ensure it gets crispy. Cook in a skillet over medium heat, flipping halfway through, until cheese is melted and bread is golden brown. Enjoy!
