Nothing says "I love you" quite like a chocolate-y treat! If you're short on time or not much of a baker, these no-bake layered raspberry nut butter cups are equal parts thoughtful, delicious, and simple to whip up.
Ingredients
Filling
1 cup soaked almonds or cashews
1/2 cup frozen raspberries
1/3 cup maple syrup
1/4 cup almond milk
1 cup coconut butter
1/3 cup Yumbutter peanut butter
Base
1 cup soaked cashews
1 cup pitted dates
1 cup melted white chocolate
Directions
Add cashews and dates to a food processor and blend until combined.
Line muffin tins with strips of parchment paper for easier removal, and press mixture down into the bottom of each cup.
Cover with melted white chocolate and freeze for 20 minutes.
Blend filling ingredients and pour on top of the frozen white chocolate layer. Freeze again until filling is solid, then drizzle with more white chocolate, sprinkles, freeze-dried berries, or your favorite toppings.
