
When it's too hot to bake but you still need a sweet treat, there's nothing better than these No-Bake Chunky Monkey Bites. Stick 'em into the freezer for a yummy cool down snack perfect for sunny days.
Ingredients
Base:
1/3 cup cacao powder
1 cup dates
1 1/2 cup walnuts
3 tbsp Yumbutter Organic Peanut Butter or Yumbutter Keto Peanut Butter
1 tsp vanilla
Pinch of sea salt
Plant milk, as needed
Fudge:
1 spotty ripe banana
1/3 cup Yumbutter Organic Peanut Butter or Yumbutter Keto Peanut Butter
1 tbsp melted & cooled coconut oil
1 tsp vanilla
1/2 tbsp maple syrup
Pinch of sea salt
Directions
Combine all base ingredients. If your dough isn't sticking together, add more dates or a tbsp of milk at a time until desired texture is achieved.
Press dough into a lined loaf pan.
Blend fudge ingredients together until there are no lumps. Pour fudge evenly over base. Top with banana slices and cacao chips if desired. Freeze until set, then enjoy!
