Almond Butter Banana Muffins with Caramel “Frosting”

Why should cupcakes have all the fun when it comes to frosting?! These Almond Butter Banana Muffins with Caramel "Frosting" keep you super satisfied with the trifecta of protein, healthy fats, and fiber while also satisfying your sweet tooth sans refined sugar. 

Ingredients

For the muffins:⁠⠀⁠

2 large bananas, ripe⁠⠀⁠

3/4 cup Yumbutter Protein Almond Butter⁠

2 eggs, beaten⁠⠀⁠

1/4 maple syrup⁠⠀⁠

1 tsp vanilla⁠⠀⁠

3/4 cup almond flour⁠⠀⁠

1/2 cup coconut flour⁠⠀⁠

2 tbsp ground flaxseed⁠⠀⁠

1 tsp baking powder⁠⠀⁠

1/4 tsp baking soda⁠⠀⁠

Pinch salt⁠⠀⁠


For the frosting:⁠⠀⁠

6 tbsp Yumbutter Protein Almond Butter⁠

4 tbsp maple syrup⁠⠀⁠

2 tbsp almond milk⁠⠀⁠

Pinch salt ⁠⠀⁠

Directions

Mash bananas. Combine all wet ingredients, stir in banana. Add all dry ingredients and stir to combine. Add to parchment-lined muffin tin, bake at 350 for 18-20 minutes. While muffins are baking, combine all frosting ingredients until desired consistency is reached. Let muffins cool before frosting.⁠⠀
