Peanut Butter Chocolate-Covered Snowmen

 Need a festive treat to share at a holiday gathering? A fun activity for the fam to make together? These Peanut Butter White Chocolate Snowmen are a no-bake dessert that can be as fancy or simple as you want. Either way, there's "snow" way they won't impress!

Ingredients

for -6+ servings:

  • 3/4 cup of Yumbutter Organic Creamy Peanut Butter
  • ½ cup cane sugar
  • ⅛ teaspoon salt
  • ¼ cup coconut flour
  • 2 tablespoons powdered sugar
  • 2 cups white chocolate baking chips
  • Optional: flaky sea salt, for topping
  • red, black, and orange icing and mini peanut butter cups for decorating

Directions

Combine all ingredients, except the white chocolate and icing, in a large bowl.

Scoop out a tablespoon of the mixture and roll into a ball with your hands. Repeat and place on parchment-lined cookie sheet and freeze until solid.

Melt white chocolate in the microwave for 2-3 minutes, stirring every 30 seconds.

Take balls out of freezer and dip them in the white chocolate. Before the chocolate hardens, stack one ball on top of another. Sprinkle with a tiny pinch of flaky sea salt if desired. Freeze for 10 minutes to create your snowmen.

Decorate with chocolate, icing, and mini PB cups (for the hats). Happy holiday "baking!"
