Gluten Free and Dairy Free Peanut Butter Pancakes

There's nothing like waking up to a fluffy stack of pancakes, but all that mixing can feel a little fussy. Say hello to your new best friend: the blender. Just toss everything in, pour 'em onto a griddle, and enjoy gluten-free, dairy free pancakes that everyone will love.

Ingredients

for about 2 servings:

  • 1/2 cup of quick oats
  • 1/2 cup of gluten-free flour blend (not a bean flour mix)
  • 2 tsps of baking powder
  • 1/2 tsp of baking soda
  • 1 whole egg
  • 2 tbsps of melted coconut oil
  • 1 tbsp of apple cider vinegar
  • 2 tbsps of Yumbutter Peanut Butter
  • 3/4 cup of nut milk

Directions

Blend everything in a blender or food processor until smooth.

Warm up a lightly greased skillet on medium heat and pour batter.

Let cook for about a minute (when bubbles start forming in the batter) and flip. Stack 'em high and pour maple syrup, berries, and Yumbutter PB on top.
