Be Awesome - Flourless Banana Pancakes
No matter how simple or gourmet you make them, pancakes always feel like a "treat yourself" breakfast. That's why we whipped up these delicious gluten free banana pancakes with almond butter. Tasty, healthy, and no sugar/carb crash mid-morning! Ingredients: 1.5 large ripe bananas 2 organic cage-free eggs 1/2 tsp. organic vanilla extract 1/4 tsp. organic ground cinnamon 1/8 tsp. baking powder Yumbutter Superfood Almond Butter Organic maple syrup (optional) Organic fresh fruit (optional) Directions:  1) Crack the eggs into a bowl and whisk them 2) In another bowl, lightly mash the bananas with a potato masher or a fork 3) Add the eggs, baking powder, vanilla, and cinnamon to the mashed bananas and stir to combine 4) Pour about 2 tablespoons of the batter at a time onto a skillet placed over a medium-low heat and cook until the bottom appears set (1 to 2 minutes). Flip with a spatula and cook another minute.
