Espresso Smoothie Bowl. Place ingredients in a blender and pulse until smooth. Smoothie should be super thick--that’s a good thing! Pour and/or scoop smoothie into a bowl and add toppings of your choice.
Crack the eggs into a bowl and whisk them. In another bowl, lightly mash the bananas with a potato masher or a fork. Add the eggs, baking powder, vanilla, and cinnamon to the mashed bananas and stir to combine.
Vegan Chocolate Truffles. In a food processor, pulse the sunflower seeds and pepitas into a fine paste. Add dried dates (pits removed) to nut mixture and grind. Add cacao powder and sunflower butter and continue to grind. A crumbly dough texture will be achieved.
