You know when you make something so delicious you can't stop thinking about it until the entire pan is gone? These gluten-free vegan brownies are exactly that. But hey, even if you eat the whole pan it's okay because we all deserve to live a little. This is by far one of our favorite recipes yet!
1 cup Yumbutter Superfood Almond Butter
1/2 cup packed brown sugar
1/4 cup pure maple syrup
2 flax eggs
1 tbsp coconut oil, melted
1/3 cup unsweetened cocoa powder
1/4 tsp baking soda
1 tbsp instant coffee powder
1/4 tsp salt
1/4 cup vegan chocolate chips
Preheat oven to 350 degrees F and prep an 8x8 inch baking dish by spraying with nonstick spray and lining with parchment paper.
In a large bowl, mix the almond butter, brown sugar, maple syrup, and eggs until well combined. Next, add melted coconut oil and mix again until smooth. Finally, add all remaining ingredients until well incorporated, folding in chocolate chips at the end.
Spread batter evenly in pan using a rubber spatula. Bake 15-20 minutes. Let cool 20-30 minutes before topping with melted chocolate or powdered sugar. Cut into squares and enjoy!
