Pumpkin Peanut Butter Chocolate Chip Sea Salt Cookies

When you can't decide between pumpkin cookies, chocolate chip cookies, and peanut butter cookies - don't choose at all! These perfectly sweet-salty Pumpkin Peanut Butter Chocolate Chip Sea Salt cookies prove that sometimes, more is more.

Ingredients

1/4 cup Yumbutter peanut butter

1/4 cup vanilla ghee

1/4 cup pumpkin purée

2 tablespoons vanilla yogurt

1/2 cup coconut sugar

1 egg

1 teaspoon vanilla extract

1 teaspoon baking soda

¼ teaspoon sea salt

1 and 3/4 cup quick pancake mix

1/3 cup chocolate chips

Sea salt, for topping 

Directions:

Preheat oven to 375° F, line a baking pan with parchment paper and set aside.

Beat together ghee, pumpkin purée, yogurt, peanut butter, and coconut sugar on medium speed until fluffy. Add vanilla and egg and mix until smooth.

In a separate bowl mix pancake mix, sea salt, and baking soda.

Add dry ingredients to wet ingredients and mix until completely combined.

Add in chocolate chips.

Scoop tablespoon size balls of batter onto covered baking sheet. Flatten out with a fork, then cross over your fork lines and flatten again. Sprinkle each cookie with sea salt.

Bake for 8-10 minutes, or until tops are golden brown. Let cool slightly and eat as is or make into a dreamy ice cream sandwich.
