Gluten-Free Almond Butter Cookies

When you're craving a little sweet treat but don't want to go hunting down 30 obscure ingredients and spend a whole afternoon in the kitchen, these gluten-free almond butter cookies are the ticket. 12 minutes in the oven and a quick dip in some chocolate (if you're feelin' fancy), and you're rewarded with these nutty bites of goodness!

Ingredients

For the Cookies

  • 3/4 cup Yumbutter Almond Butter
  • 1 egg, room temp
  • 1 tsp vanilla extract
  • 1/4 cup honey⁣
  • 2 tbs coconut sugar
  • 3/4 cup almond flour⁣
  • 1 tsp cinnamon
  • 1/4 tsp baking soda⁣
  • Pinch of pink Himalayan salt ⁣

For the chocolate coating, melt together the following:

  • 1 tbsp coconut oil⁣
  • 1/4 cup chocolate of choice

Directions

Mix wet ingredients in a medium size bowl and set aside.⁣

Mix dry ingredients and then combine with wet.⁣

Use a tablespoon or small ice cream scoop to make equal size cookies and then press down with a fork. Sprinkle some extra pink salt on top and bake for 12 minutes at 325°F.⁣

After cookies are don’t baking, let them cool completely before dipping into the melted chocolate. 

Dip cookies, place on parchment paper, and stick them in the freezer for an hour for the chocolate to harden. ENJOY! ⁣
