- 1/2 cup butter
- 1/2 cup Yumbutter Peanut Butter
- 5 heaping cups mini marshmallows
- 6 cups crisp rice cereal
- 1/4 tsp coarse salt
- 1 1/3 cups semisweet chocolate chips
- 1 tbsp coconut oil
Directions
Heat the butter over medium/high heat in a large pot until melted, then reduce heat to medium and stir continuously until the butter starts to froth and turn a golden brown. Once it takes on a nutty smell, remove from heat to avoid burning.
Add in peanut butter and marshmallows. Stir until smooth.
Pour in crispy rice cereal and salt. Mix until well combined.
Press the mixture down into a large glass dish with a rubber spatula.
Combine coconut oil and chocolate in a glass bowl and melt together in a double boiler. Stir continuously to prevent clumps.
Pour melted chocolate over the cereal and marshmallow layer and refrigerate until chocolate has hardened. Cut into squares and enjoy!
